Here's the base recipe (all ingredients I use are organic): 1 c. unbleached white flour 1 c. whole wheat flour 1 c. sugar (I use 1/2 brown and 1/2 organic unbleached white) 1 tbsp. cornstarch 2 tsp. baking soda 1/2 tsp. salt (I don't add salt) 2-1/2 c. (20 oz.) unsweetened applesauce. 1 tsp. vanilla or spices of choice Preheat oven to 325 F. Mix the dry ingredients together; then add the applesauce and stir. Depending on the size/type of the pan, bake for 40-60 minutes. O.K., now for the tweeks. Spice Cake: Add 1/2 tsp. cinnamon 1/4 tsp. ginger 1/8 tsp. cloves 1/4 tsp. mace 1/2 c. raisins Upside Down Cake: Spices of your choice plus If you are going to make a pineapple upside down cake, mix a little pineapple juice with some brown sugar and pour it in the cake pan, layer pineapple slices on top and then pour in the batter. Apple upside down cake, dot some margarine and sprinkle some brown sugar and chopped nuts (walnuts, pecans, almonds, your choice) and then layer slices (wedge type) over the margarine/sugar/nut layer and then pour on the batter. Crumb Cake: Dot pan with margarine. Mix slivers of almonds with a little brown sugar, a small amount of flour and some quick oats. Make an even layer in pan then pour in batter. Cookie Bars: Dot pan with margarine. Sprinkle in quick oats. To batter add spices of choice, 1/2 cup of carob chips and 1/2 cup of chopped walnuts (actually we use more than that but, hey, DH and the kidlet have a REAL sweet tooth). You can add more ginger and use all brown sugar and you have a great gingerbread. Real yummy with rice milk ice cream. Apple Pie Cake: Pour a layer of apple pie filling in the pan. Use apple pie spice instead of vanilla in the batter. Spoon batter over apple pie filling. A tad messy if you try to remove from the pan to plate it. I usually serve it straight from the pan. Rocky Road Cake: Vegan marshmellows cut into small pieces, carob chips and chopped walnuts added to batter. It is impossible to ruin this recipe. Add whatever you think of. It is really a forgiving recipe and I haven't found anyone yet who doesn't like it. Even my cousin who is a died in the wool " vegetarian foods are only fit throwing in the compost heap " loved the cake and continues to rant that I am lying about the recipe! The carob has to be chocolate. There has to be eggs in it or it wouldn't rise. There has to be oils/fats in it or it wouldn't be so moist, blah, blah, blah! ***Don't let your batter sit around. It starts to bubble and rise as soon as you finish putting in the applesauce, so get it right in the oven.
