I can find vegetarian soy cheese but it all has Casein (spelling?) and that is a milk protein so not vegan. Any online resources ya'll can share. Please!!!!! I'm new to being a vegan and the only one in my family so not only do I need resources but support too. The very best we've found (and I've tried everything I can get my hands on...) is the cheese by Follow Your Heart. You can order it from them online but it is expensive to have it delivered. I have my local natural foods store order it for me. If you have a health food store see if they carry any of the follow your heart products (vegenaise, salad dressings). If so, they can probably get you the cheese. It works great. I'm still working out the kinks: Vegan nachos Adapted from a recipe in Debra Wasserman's Simply Vegan . 1 1/2 cups nutritional yeast 2/3 cup flour (white or whole-wheat pastry -- I used regular whole wheat, and the texture was off a bit) 2 cups water 1/2 cup vegan margarine 1 teaspoon granulated garlic 1 tablespoon prepared mustard 1 cup salsa, very chunky (or drain some less-chunky salsa to get just a cup of the chunks -- homemade salsa works great for this, as does just using a smaller quantity of canned jalapenos, diced) Mix the first three ingredients together. Stir or whisk frequently over medium heat until it's the thickness of a very thick pudding. Add the margarine and stir and cook for another minute or two.
