Guest guest Posted January 20, 2005 Report Share Posted January 20, 2005 do you want specific recipes er..? there are a billion and one here in the archives(someone use to yell at me fer posting so many eggplant recipes) but... in general you slice them into rounds or lengthwise... and speinkle with salt this draws out the moisture and some of the bitterness then either rinse er pat dry it can then be fried, baked, pureed, roasted, er prepared any number of ways... personally i can't really stand the big "american" eggplants, tho like the small japanese, thai and italian styles eggplant oxidizes quickly as well, so make sure to prepare it ASAP Valerie Fjallstrom Jan 19, 2005 6:06 PM Re: Re: dinner plans This will sound strange, but how do you cut or use an eggplant?
