I can use vegan margarine, milk and cream instead of butter, milk and cream, and possible use blended banana instead of double cream, but I think it needs something to hold it together, as the eggs would. Has anyone used vegetarian gelatine or something similar that they could recommend? Any help appreciated. Jo Rich Chocolate Tart This is a sinful, dark, chocolate dessert for those who love chocolate and aren't afraid to show it. Serves eight or so. Ingredients 200g Plain Chocolate Digestives, crushed or ground in a food processor 50g Butter, melted 284ml pot of Double Cream 200g Bar of plain chocolate 2 Eggs (medium) 75ml Milk Method Mix the crushed biscuits and butter together thoroughly and press into a loose bottomed, 20cm fluted tin. Gently bring the cream to the boil and pour over the chocolate until melted. (This is sinful). Beat the eggs and milk together and add to the chocolate mixture. Once thoroughly combined, pour into the biscuit base. Place the tart in a pre-heated oven at 170 Celsius and cook for 15-20 minutes, until just set. Remove and allow the tart to cool.
