Guest guest Posted November 8, 2004 Report Share Posted November 8, 2004 When feeling kinda funky from eating the same meals over and over, I always find that throwing in some extra fresh veggies and fruits makes me feel better. That's where we get most of our vitamins and minerals, so you gotta have 'em. Remember scurvy? If you can't afford fresh, frozen are almost as good. Don't worry about organic if you are just barely getting by. The good thing about learning to cook for yourself is that it is much cheaper. Also, there are tons of free recipes out there in the internet, so you don't even need to buy cookbooks. I lived for 4 years as a totally broke vegan and here is my money-saving advice: forgo the veggie burgers, soy cheese, soy ice cream etc. and use that money to buy fresh veggies, beans and some kinds of grains (rice, pasta, quinoa, whatever you like). If you like rice, buy it cheaper at an Asian food store. Mix up your veggies to include whatever is on sale. Use fortified orange juice as a calcium source instead of soy milk which is more expensive. Forget about expensive " vegan products " like soy ice cream, pre-packaged meals, etc and concentrate on making stir-fries, stews, curries and other simple meals.
