Guest guest Posted February 12, 2007 Report Share Posted February 12, 2007 Bonnie's Lemon Mango Ginger Bread Makes 1 9x5 loaf Batter: 1 1/2 cups all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1 1/4 cup sugar 1/2 cup butter 3 eggs 1/2 cup lemon juice 1/8 tsp lemon extract 1/2 tsp powdered ginger 1 TBS crystalized ginger, finely chopped 3/4 cup mango, diced and drained Streusel: 1/2 cup pecans, finely chopped 1/4 cup brown sugar 1/2 teaspoon nutmeg In a medium bowl, stir together the flour, baking powder and baking soda. In another bowl, with an electric mixer, beat butter and sugar until creamy. Then add eggs one at a time. Beat until fluffy. Beat in lemon juice and lemon extract, followed by milk, pow- dered ginger, and crystalized ginger. Add slowly to dry ingredients. Stir in mangoes. Set aside. Stir together streusel ingredients. Spoon 1/2 of the batter into a well- greased 9 " x5 " loaf pan. Bake at 350 degrees F for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
