So strange what you said about brie--Brie was one of my favorite foods for years, but on the stovetop the cream cheez just tasted, well, ucky to me. But I just looked up the vegan brie recipe in the same cookbook and, lo and behold, there are definite similarities. Hmmm... I love your idea for an alfredo-like sauce--Can't wait to hear how it turns out! Peace, Maureen PS I know what you mean about the no willpower thing--I'm the same way with anything that has chocolate & hazelnuts, especially if it's bite-sized.
