Guest guest Posted February 11, 2007 Report Share Posted February 11, 2007 Valentine Heart Cake 1 tbsp. shortening 1 tbsp. flour 1/3 c. shortening 1-1/2 c. flour 3/4 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 3/4 c. milk 1 egg 1- 1/2 tsp. vanilla 13 maraschino cherries 1 pkg. white frosting mix Coconut flakes** see note Heat oven to 375 degrees. Grease 9 x 9 x 2 inch square pan* or use a heart cake pan with 1 tablespoon of shortening. Sprinkle 1 tablespoon of flour over the pan. Beat shortening, flour, half of the milk, sugar, baking powder, egg and vanilla in large bowl. Add the remaining milk and mix together. Then beat for 2 minutes. Scrape batter into the pan. Bake for 30 minutes. Remove and set aside to cool. Prepare frosting as shown on package. Remove cake from pan and cut into heart shape. Spread frosting over cake. Sprinkle with coconut flakes and decorate with cherries. Notes: **We do not use coconuts unless they are cooked in.. * The original recipe called for a square pan so I left it in for those who dont have the heart pan. Guest guest Posted February 18, 2007 Report Share Posted February 18, 2007 I seem to remember making a heart-shaped cake in my youth by cooking one square and one round layer. Turn the square layer on point, so it looks like a diamond, then cut the round in half and put the flat edge of each half against an upper edge of the diamond and frost in place. This seems easier to me than trying to cut a heart out of a square and dealing with a gazillion crumbs.
