Chik'n Chow Mein

I was having a nostalgic craving for the chow mein my mom used to make

from those cans, the double ones, you know? I've noticed whenever I

give in to one of these nostalgic cravings I regret it :) Oh, like

you never ate cold spaghetti O's on toast ;) and that Cap'n Crunch is

like eating gravel! Anyway, 1 serving from the chow mein cans is 27%

of your daily sodium! So I came up with this dinner based on a recipe

from one of DH's cookbooks: Chinese Village Cookbook by Rhoda Yee.

 

 

1 can Low Fat Worthington Fri-Chik (minus 2 patties), drained and

sliced in irregular bits

6 oz bean sprouts

1 cup celery, sliced on the diagonal

half a medium white or yellow onion cut in thin wedges

1 green onion, sliced lengthwise & cut in 1 inch segments

small handful of:

canned bamboo shoots

canned water chestnuts

canned straw mushrooms

canned baby corn, chopped

1/2 tsp sugar

1/4 tsp salt (might not use all of this)

 

Sauce:

1 Tbs cornstarch

1 cup veg chicken broth

2 Tbs veg oyster sauce

2 tsp tamari / light soy sauce

1 tsp sesame oil

 

Mix sauce. Heat wok. Add a little bit of oil. Stir fry onions and

celery for 1 minute. Add a pinch of the salt and 1 Tbs water; cover

and cook 1 minute. Set aside. (I kept a mixing bowl by the wok to

place each ingredient into) If you need more oil add a little. Stir

fry the bamboo shoots, water chestnuts, straw mushrooms and baby corn

together for 1 minute. Add 1 Tbs water, cover & cook 1 minute. Set

aside. If you need more oil add a little. Stir fry bean sprouts with

a pinch of salt 1 minute and set aside. If you need more oil add a

little. Stir fry Fri-Chik slices and green onion 1 minute. Set aside.

 

Turn heat to medium. Pour sauce mixture into wok, stirring until it

begins to bubble and thicken. Add sugar. Add vegetables and

Fri-Chik. Stir until everything is heated through. Serve on top

crispy chow mein noodles.

The recipe sounds great,,,,,,,,,lol now for those nostalgic

Yeh and what did they do to Twinkies? I remember them as tasting

better. Had one 5 years ago and it was so bad I haven't had another.
