I know wild mushrooms are always easy to find. Try using mostly the

oyster and you can mix some of the small white domestic mushrooms. You

want to prevent the meaty texture and flavor you get often with cremini

or porti's.

Here's a mushroom site and it has substitutions under the different

mushrooms.
