Guest guest Posted February 9, 2007 Report Share Posted February 9, 2007 White Bean Chik'n Chili little bit of olive oil 1/2 a small red onion, diced 1 Tbs chili powder 1 Tbs cumin 1 Tbs veggie chicken broth powder 1 small can salsa verde (mine was 7 oz) 4 Tbs canned green chilis 1 bay leaf 4 cans white beans 1/2 - 1 cup veggie chicken broth 1 can low fat Fri-Chik, diced (Hi Judy I ordered a case!) Saute onion in a little bit of olive oil until soft. Add chili powder, cumin and broth powder, stir mixture around to let the spices wake up. Add the salsa verde, green chilis and bay leaf. Add the beans. Stir and let everyone get friendly and hot. Add broth to desired consistency. Simmer about a half hour to 45 minutes. We had this with mexican rice and collards.
