I've never used quinoa flakes and I'm not sure what they are, so I don't know if they'd work. Sorry! Limettas are naturally sweet lemons or limes, I forget which. They were on sale at my co-op with a note about how amazing their juice is, but for some dumb reason I didn't buy any and I've been wondering about 'em ever since. Hopefully, they'll have more when I go back this weekend. By the way, I'm really enjoying this citrus discussion--Thanks so much for starting it! Coconut Rice with Toasted Coconut 2 cups jasmine rice, washed 1 13.5-oz. can coconut milk 1 cup water 1 cinnamon stick 1/4-teaspoon salt finely grated zest of one lime 1/2 cup unsweetened shredded coconut Combine the first 5 ingredients in a saucepan and bring to a boil. Lower heat, cover pot, and simmer 20 minutes. Add the lime zest and stir with a fork. Remove from heat, cover again, and let sit for 10 minutes. Meanwhile, heat a skillet over low-medium heat. Add the coconut and toast, turning often, for about 3 minutes or until coconut is brown and toasty. Remove cinnamon stick from rice and serve, sprinkling the toasted coconut over each serving. It was something I copied and filed, but forgot to write down where I got it. Lemon pudding (vegan) 2 cups soy milk 1/2 cup sugar 3 tablespoons cornstarch 3 to 3-1/2 tablespoons lemon juice 2 teaspoons lemon zest 1/8 teaspoon salt 1 tablespoon potato flour Combine everything except the potato flour in a blender and process until smooth. While the blender is still running, add the potato flour. Transfer to a saucepan and heat, stirring constantly, until it thickens and boils. Cook for about 30 seconds more, stirring constantly.
