Guest guest
Supposing a recipe calls for 1/4 C of unsweetened cocoa powder, but you would rather use up some of your unsweetened baking chocolate (so sugar is not a factor in this question), what would be a reasonable conversion ratio? Guest guest
i've never tried this (but i've subbed cocoa for baking chocolate before), but here's the conversion i have: 1/4 cup cocoa powder + 1 1/3 tbsp shortening or oil (or 2 2/3 tbsp water) = 1 1/3 oz. baking chocolate so, whatever liquid the recipe calls for in the cocoa mixture, i would remove the amount on the left side before adding it. it's just that baking chocolate has cocoa butter and cocoa powder doesn't, so you have to account for that either way. i hope this helps a bit. kate ________________________________ On Behalf Of Erin Thursday, February 01, 2007 7:12 PM cocoa powder to melted conversion?
