I'll have to look for that Quinoa recipe. I bought a box of Quinoa flakes the other day. Do you think they would work in that? I've not tried limettas before. What is it? I love citrus flavors too. They seem to add such a fresh flavor to things. A friend of mine was telling me that she put 1 T. Lemon Juice, 1 T. Sugar and about 1/2 water in with some fresh cut up carrots and boils them until tender but not mushy. I tried some and they were soooooooo good. She said it is very important to add the carrots to boiling water, not cold water, so they retain their bright color. I do that too. I'm going to have to try and make these here at home. She also said that it is important not to add much water. I love citrus fruits in just about anything. (Donna's Chambord/grapefruit combo totally has my mouth watering!) Tart and creamy is also a big favorite of mine--I made a vegan lemon pudding for the first time a couple of months ago, and a coconut rice with lime zest last week that hit that spot. (I could post either/both if anyone wants 'em) I also saw one of my all time favorite non-creamy, summer recipes in the files--Quinoa with Green beans, tomatoes, and basil. (There's two tablespoons lemon juice in it, and it has a lovely lemony flavor.) Has anyone tried limetta (limettas?)?
