I have been vegi for 17 years but don't know anyone else that is vegetarian so I get quite a bit of teasing from my friends and family. Really looking forward to getting to know people and picking up and sharing some recipes, here is one of my recently discovered faviroutes great with a jacket potato and salad. Baked butter beans 1 tsp of olive oil 2 ozs. of onion, chopped 1 clove of garlic 1 oz. of celery 1 pinch of dried thyme 1 small tin of chopped tomatoes (200g) 1/2 tsp of tomato puree 1/2 tsp of honey 4 ozs. of butter beans 1 tbs of fresh parsley, chopped Preheat the oven to 200 degrees C. Heat the olive oil in a non-stick pan and add the onion and crushed garlic. Sauté for 4 minutes, then add the sliced celery. Continue to cook for a further 4 minutes. Add the thyme, tomatoes, tomato puree and honey, bring to a simmer and then stir in the butter beans. Place in a low shelf in the oven and cook until the potato is ready. Add a little water or cover with foil if the sauce appears too dry. Stir the parsley into the beans just before serving with the baked potato.
