Guest guest Posted January 29, 2007 Report Share Posted January 29, 2007 From cooking light magazine: 1/3 C raisins 1/4 C finely chopped fresh parsley 1 1/2 Tbsp sliced almonds 1 pound matchstick cut carrots 3 Tbsp mayonnaise 3 Tbsp fresh lemon juice 1 1/2 tsp. sugar 1/2 tsp. cumin 1/2 tsp. paprika 1/4 tsp. salt 1/4 tsp. cinnamon 1/4 tsp. minced garlic Combine first 5 ingredients in large bowl. Whisk together remaining ingredients and mix with carrot mixture. Chill before serving. I ended up using cilantro instead of parsley, it was good! I put it on whole grain bread and top with some sunflower seeds. YUM. I'm going to try this recipe when I can be trusted holding a knife and grater again. lol Jeanne in GA Get your own web address.
