Guest guest Posted January 26, 2007 Report Share Posted January 26, 2007 Cheese and Tomato Pie 2 Spanish onions, peeled and sliced (any sweet onion will do) 4 large tomatoes, peeled and sliced 3 oz. grated cheese 8 oz. crust pastry salt and pepper beaten egg to glaze Pre-heat oven to 400 degrees. Line an 8 inch pie plate with rather more than half the crust pastry, leaving the rest for the lid. Place the onions in boiling, salted water and cook until tender then drain well. Fill the pastry case with layers of onion rings, tomato slices and cheese, seasoning lightly between the layers. Damp the pastry edges and cover with the lid. Press the edges of the pastry well together and flute with the finger and thumb.
