Guest guest Posted January 27, 2007 Report Share Posted January 27, 2007 Orange, Kiwi and Jicama Salad With Lime Dressing 1 head salad bowl lettuce, separated into halves 1 head red leaf lettuce, torn 2 stalks celery, thinly sliced 1/2 pound jicama, peeled and diced 2 green onions, thinly sliced 3 kiwi, peeled and sliced 1/4 inch thick 3 naval oranges, peel and pith removed, sliced 1/4 inch thick 1 red onion thinly sliced into rings Dressing: finely ground pepper to taste 1/4 cup walnut oil juice of 2 limes 1/2 tsp. salt juice of 1 orange Line a serving bowl with salad bowl lettuce leaves. In a medium bowl, combine red leaf lettuce, celery, jicama, and green onions. Toss well, then mound in center of lettuce leaves in serving bowl. Top with circle of overlapping kiwi and orange slices. Arrange onion rings on top. For dressing: In small bowl, combine lime juice, orange juice, salt and pepper. Whisk in walnut oil.
