Mari Kwanzaa Squash Bake For the squash part of the recipe: 1/3 cup butter 1/2 cup sugar 2 eggs 1 5 oz. can of evaporated milk 1 tsp. thyme 1/2 tsp. cayenne 1 tsp. vanilla extract 2 cups cooked and mashed butternut squash In a mixing bowl cream the butter and sugar together. Add the rest of the ingredients and beat until all the ingredients are well incorporated. Pour into a greased baking dish. Topping: 1/2 cup granola 1/4 cup light brown sugar 1/4 cup pecan pieces 3 tablespoons butter at room temperature Bake the squash mixture uncovered without the topping in a pre-heated 350 degree oven for 40 to 50 minutes or until almost set. Mix together all the toppings and sprinkle over the squash mixture and continue cooking for 10 more minutes. ______________________________\ ____ Want to start your own business?
