Guest guest Posted January 27, 2007 Report Share Posted January 27, 2007 Carmelized Apples and Carrots 3 cups sliced, peeled and diced apples 1 1/2 cups peeled, baby carrots 1/2 cup water 1/8 teaspoon salt 2 teaspoons margarine 1/2 cup firmly packed brown sugar 1/2 teaspoon cinnamon Place apples, carrots, water and salt in small saucepan. Cover and cook over medium heat until water starts to boil. Reduce heat and simmer 3 minutes; drain. Add remaining ingredients, tossing gently until combined. Cook over medium heat 3 minutes or until sugar is dissolved and a glaze forms. Makes 6 servings. Calories 137, Fat 1 g, Carbs 31 g, Sodium 88 mg, Fiber 2 g.
