Vegan resources

Hey gang,

 

A month ago I would have said I'd _never_ become vegan, but after a trip

to the doctors this month, it turns out that I'm one very out-of-control

type 2 diabetic ovo-lacto vegetarian. (I'm the worst sort, I guess,

because I'm overweight with high blood pressure and high cholesterol --

I've been eating far too much cheese and dairy and potatoes and bread

and pasta and salt with all those yummy processed soy products, like

Boca burgers. (My A1c was 12.2 which is REALLY bad. My cholesterol was

280. Blood pressure readings were 150/100 and 130/90 on different

visits to the dr. Bad bad bad.)

 

So, I've had to make some really radical lifestyle changes or else be on

insulin and medicines for the rest of my life. I decided I'd rather

give up all that stuff than deal with the alternative. The ironic part

of all this is that I _have_ made changes to my diet in the last eight

or nine months and I had lost 20 pounds - mostly due to switching to

whole grains and having a breakfast most days of whole grains. I'd also

given up coffee (and all caffeine) and fake sugars. So at least I don't

have to deal with all that now.

 

So now, thanks to the Eat To Live program (http://www.drfuhrman.com),

I'm a low-fat vegan and I'm not eating any oils, salt or sugar. I'm not

even eating any grains (sniff). I'm basically eating vegetables three

times a day with beans/legumes and following it up with a piece of

fruit. The weird thing is that it's not even hard. I'm not hungry at

all. I'm not even tempted to snack or eat any off-limit foods. I'm

eating a really BIG salad three times a day. lol (I'm also walking 30

to 60 minutes a day and I plan to add weight training.)

 

So, I need to figure out how to cook this new way. I've been a

dairy/ovo/grains sort of cook - I really wasn't big on vegetables (and I

always felt guilty about it - I'd buy the vegies, then rarely cook them

and they'd spoil). I do plan to buy a Vitamix when I have the money.

(And I hope that's soon.) Once I get my health under control I plan to

live this way, although in not quite so restricted a way. (I'm on his

initial 6-week program which is more restrictive than his life plan.)

Though as a diabetic, grains may never be my friend again.

 

So, I'm trying to collect a good bunch of resources for myself. These

are the vegan (or mostly vegan) cookbooks that I have:

 

The Native Foods Restaurant Cookbook by Tanya Petrovna

The Vegan Lunch Box by Jennifer McCann

Authentic Chinese Cuisine by Bryanna Clark Grogan

Japanese Vegetarian Cooking by Patricia Richfield

 

(I have zillions of ovo-lacto cookbooks and bread-making books. sigh)

P.S. The good news is that my weight is coming down and my blood

glucose numbers are coming down, without insulin or any medications. Of

course neither as quickly as I'd like, but pretty amazing, none the

less. I'm actually looking forward to going back to the doctor in 8 or

12 weeks for another round of blood tests and I hate needles! ;-)

Well done for tackling this head on, Sharon - I'm pleased to hear yiu

are seeing benefits already. I'm a recent vegan too. Below are some
