It was the maiden voyage of mine. Even DH likes it and he usually gets peeved when I spend more money on kitchen stuff (says we have enough, and we do, but....) Broccoli Soup 2 bags frozen broccoli ( I usually use fresh) 32 ounces water 1 chopped onion 1 T butter 1/2 tsp salt 8 oz shredded chedder cheese 2 packages tofu, firm 2 C milk 2Tbsp flour 1 tsp pepper 3 Tbsp soup base (usually I use Miso, but the regular stuff works fine too. Or Boullion. ) Sautee the onion until translucent. Add broccoli to a BIG pot. add water to completely cover the broccoli. Add soup base. Simmer until broccoli is soft. Use a slotted spoon, spoon out broccoli and onion and puree in food processor. Leave some for chunks in soup. Puree tofu and add to pot. Return to stove, add cheese & milk and heat until cheese melts. Make the flour into a roux and add. Raise until soup thickens some SLOWLY add milk ( be sure soup is not boiling) Quote Link to comment Share on other sites More sharing options...
