To me, it's like a very easy version of chana masala. It's cheap and serves at least 2. I forgot to use the butter and it tasted just fine without it. Amazing veggie masala This was disgustingly AMAZING. make it now!! 1 can chickpeas ( save 3 tbsp of the chickpea liquid) 3-6 tbsp tomato paste ( your preference) 1-2 tbsp curry powder ( to taste, basically) 1/2 tsp salt 1/4 tsp black pepper 1 med onion, chopped 1 med carrot, chopped 1 large glove of garlic, minced 1 tbsp vegan margarine 2 tbsp olive oil Cook the onions and carrots in oil till tender. Then throw in everything except the margarine. When all the the stuff is cooked ( the chickpeas are tender), melt in the margarine.
