Here's something I created last night: VEGGIE ROLLS 1 TBSP minced garlic 1C chopped onion 1C sliced carrots 14 oz chunky style tomato sauce 1 TSP rosemary (crumbled) 1 zucchini sliced into thin rounds 10 ounces frozen peas 16 sheets frozen phyllo dough, thawed Heat olive oil in bottom of large heavy pot. When hot, add garlic and saute 1 minute. Add onion and continue to saute, stirring (2 mins). Add carrots and saute additional 2 mins. Pour in tomato sauce, rosemary and simmer, stirring occassionally until thick (about 7 mins) Stir in zucchini and peas. Set aside. Preheat oven to 400 degrees. Oil large baking sheet & set aside. Fold one sheet of phyllo dough into 8 1/2 x 12 inch rectangle and brush with olive oil. Repeat with 2nd sheet and stack on top of first. Scoop heaping 1/2 cup veggie mixture onto dough, spread on long side about 1 1/2 inches from edges. Fold in short sides and roll up, starting on long side, jelly roll style. Place seam side down on baking sheet. Repeat with remaining phyllo sheets and filling. Place in oven, turn heat down to 375 degrees and bake 18-30 minutes until golden brown. Serve with green salad.
