I make all my food from scratch also. I use lentils and beans to make burgers, I wasn't used to eating tofu pups, Veat or alternatives that taste like nonvegetarian foods. I prefer rice milk since it's not as heavy as soy milk. Some of the soy milk tastes like cow's milk to me which I never could stand. The alternatives do make it a lot easier for the new vegetarians to adjust. I know several new vegetarians that started with alternative products until they got the hang of cooking vegetarian meals, balancing their grains, etc. Seems like a lot the nonvegetarians I work with pop everything into a bowl from a can and into the microwave at work. I never see them eating grains unless it's rice and the only vegetables I see are breaded abnd fried mushrooms or zucchini sticks they dip in ranch dressing. Did you ever notice that? I have always been a creative cook, so after skimming through some cookbooks I kind of got the idea of substituting. I eat white cheeses, cause there is no subdstitute for riccato that doesn't use soy or other milk products. I don't much care for Vegi burgers, so make patties of beans and buckwheat groats. I use buckweat groats in a lot of things as a substitute for ground beef and unless they look carefully, most people can't tell the diffference. really like the delicate flavor of little black beans, so they go in or on top of lots of things. Have you ever used Teff or Teff flour. Someone gave me a bag of each as a gift and I don't know what to do with it. I suppose I could use the flour to thicken stuff, but how do I use the grain?
