Guest guest Posted January 21, 2007 Report Share Posted January 21, 2007 Green-Carrot Soup 2 cups carrots,chopped into big pieces 1 medium sized onion,chopped 6 to 8 cloves garlic,chopped 2 green chilies chopped 1 cup coriander leaves,chopped fine..save the stems too. 2 tbsps. butter 2 bay leaves 1 tsp. pepper corns 4 cups water 2 tbsps. butter 1/2 tsp. white pepper powder- salt to taste. Heat butter in a pan,add bay leaves, peppercorns, green chilies, onions and garlic. Saute for 2 minutes. Add carrots,coriander stems and water and bring to a boil. When carrots are completely cooked, remove them and put in a blender to make a fine puree. Reduce the stock slightly and strain. Take the puree in a pan and add the strained stock to reach the desired consistency. Bring to a boil again. Add white pepper powder,dissolved in a little water. Add salt to taste.
