Pearl Tapioca

I really had to search to find pearl tapioca..The instant tapioca that

you buy in the box at the market just does not make the best pudding. I

finally found pearl tapioca at my local Vitamin Cottage. The trick to

making excellent pearl tapioca pudding is to allow the tapioca to soak

in the milk for at least 20 min. before adding the additional

ingredients. This pudding desert was a tradition in our family for

Christmas Eve. I will look for the recipe and post it. My recipe calls

for the egg whites to be beaten until stiff peaks are formed and then

folded into the hot pudding mix. This recipe takes some extra time to

prepare but is lovely for special occasions.

-Ooops, Sorry about that remark about instant tapioca not making the

best pudding. Not a good choice of words. I'm sure that all of the

recipes using the instant are very tasty. I found that the instant

tapioca left a somewhat grainy texture and flour taste to the

pudding. The pearl tapioca after being washed and soaked has a very

different texture and taste.

I just checked. I have minute tapioca & small pearl tapioca. Nevermind the

recipe on the quick stuff. On the pearl tapioca, it says to soak overnight in

2c water. Interesting. Looking forward to your recipe!
