Guest guest Posted January 18, 2007 Report Share Posted January 18, 2007 Cheese Enchilada 10 Flour Tortillas 2 (12 oz) cans prepared Enchilada Sauce 2 cups shredded Cheddar cheese 1/2 cup chopped onion 1 small can diced green chilies 1 small can sliced olives Preheat oven to 350°. Heat prepared Enchilada Sauce on the stovetop or in the microwave. In a small bowl, combine 2 1/2 cups cheese and onions. Warm tortillas in microwave then dip them in the Enchilada Sauce; lay them in a lightly greased 9x13x2-inch casserole dish. Fill each tortilla with cheese and onion mixture; roll. Repeat until dish is full. Sprinkle sliced olives, green chilies, and remaining cheese on top. Bake in preheated oven for 25 to 30 minutes, or until cheese is melted and bubbly.
