Guest guest Posted January 18, 2007 Report Share Posted January 18, 2007 Japanese Marinated Mushrooms (Ken Hom) 1 lb. small button mushrooms Marinade 2/3 cup sake, rice wine or dry sherry 2 tbsps. soy sauce 2 tsps. sugar 1 tbsp. white rice vinegar or cider 1/2 tsp. salt Garnish 2 tbsps. scallions, finely chopped Place the marinade ingredients in a small pan and simmer for about 5 minutes. Allow to cool thoroughly. Combine the cooled marinade with the whole mushrooms and let them marinade overnight. When ready to serve the mushrooms, drain them and discard the marinade.
