The flavor is just the right mix of hot and spice for me and this will definitly go into my " keeper " file. I wanted to try the Coconut Lime rice so decided to make and serve that with my beans....Great combo taste wise and it looked gorgeous on the plate! I put the rice in the middle surrounded by the beans with avocado and salsa on top of the rice..pretttttty! If I was serving the rice alone I think I will use lite coconut milk as, for me, the rice was a bit too sweet. But with the black beans, they paired really well. On a trip to Baja Mexico a native there told me that they use the Epazote spice alot and that that spice is what makes the flavor difference between our mexican cooking and theirs. I don't know how true that is, but I have it on my shelf and it went into the beans and if it added to the flavor, it was good! Thanks for the recipes!!
