Cheap Eats: Hoppin John

Another dish made by my husband person. I don't normally use the instant or

quick cook rice but it is a lot easier for him. (And I don't have to worry

about him messing up my beloved Zojirushi cooker.)

 

1 can Rotel tomatoes with chilis (comes in different degrees of heat)

About 1/2 (one half) can water

1 can Minute 5 minute cook brown rice

1 can Bush's black eyed peas, drained

Salt to taste

 

Mix all together. Cover with plate or lid or waxed paper. Nuke 5 minutes, let

sit another 5.

 

Cost breakdown:

Rotel tomatoes on sale 4 cans for $3.00, .75 cents

Instant brown rice about .75 cents

Can black eye peas on sale 3 cans for $1.00, .34 cents

Total 1.84

 

I'd usually have cooked the beans from dry, making it cheaper, and using regular

brown rice but this is going to be a repeat dinner even after I am finally able

to do anything around the house other than watch the dust bunnies growing. He

served it with Glory Foods canned collard greens (.89 cents) and made an apple

cobbler with apples I had frozen for pie last year.

 

Then, miracle of miracles, he cleaned the kitchen.

That is some husband that you have Jeanne - sounds like he is worth his

weight in gold. I could grow to want one like that - where did you find

him? And the Hoppin' John sounds good too...
