Guest guest Posted January 13, 2007 Report Share Posted January 13, 2007 Pesto Green Beans with Three Types of Tomatoes Serves 8 2 plum tomatoes, each cored and quartered 1 cup yellow pear tomatoes, each halved 1/2 cup cherry tomatoes, each halved 2 Tbsp olive oil 3 garlic cloves, minced 1 1/2 lb fresh green beans, trimmed 2/3 cup Pesto (your favorite) Toasted pine nuts (garnish, optional) 1. Preheat the oven to 400 degrees. In roasting pan, mix tomatoes, oil, and garlic. 2. Roast 10 to 15 minutes, until tomatoes start to release juices and begin to shrivel. Set aside. 3. Bring large pot of lightly salted water to a boil. Add beans; cook 3 to 4 minutes, until crisp-tender. Drain; rinse with cold water. Drain again. 4. In bowl, toss beans with Pesto. Top with tomatoes.
