Mediterranean Hummus Dip

 

This is a great dip, spread or salad dressing. My

favorite is the Greek Vegetarian with cucumbers,

artichokes, tomatoes, grilled onions and spinach. It

is also quite delicious with tortilla chips, crostini

or fresh vegetables.

Makes about 2 1/2 cups

 

1/2 cup mayonnaise, use a good quality like Hellmann's

1/2 rinsed and drained chickpeans

1/2 pound crumbled feta cheese (about 2 cups)

1/2 cup sour cream

10 pepperoncini peppers, chopped with the stems

removed (about 1/2 cup)

8 cloves garlic, peeled

3 tablespoons capers

1 teaspoon dried oregano

1 teaspoon dried marjoram

1 teaspoon hot sauce (Texas Pete or Tabasco)

1 teaspoon freshly ground black pepper

2 tablespoons freshly chopped parsley or cilantro.

 

1. Place all the ingredients in the bowl of a food

processor and process for about 1 minute, until all

ingredients are mixed thoroughly. The mixture will not

be completely smooth because of the feta cheese.

2. Refrigerate until ready to use.
