My favorite is the Greek Vegetarian with cucumbers, artichokes, tomatoes, grilled onions and spinach. It is also quite delicious with tortilla chips, crostini or fresh vegetables. Makes about 2 1/2 cups 1/2 cup mayonnaise, use a good quality like Hellmann's 1/2 rinsed and drained chickpeans 1/2 pound crumbled feta cheese (about 2 cups) 1/2 cup sour cream 10 pepperoncini peppers, chopped with the stems removed (about 1/2 cup) 8 cloves garlic, peeled 3 tablespoons capers 1 teaspoon dried oregano 1 teaspoon dried marjoram 1 teaspoon hot sauce (Texas Pete or Tabasco) 1 teaspoon freshly ground black pepper 2 tablespoons freshly chopped parsley or cilantro. 1. Place all the ingredients in the bowl of a food processor and process for about 1 minute, until all ingredients are mixed thoroughly.
