Sometimes I bread the eggplant slices with italian salad dressing instead of egg and panko crumbs and pre-bake them a little before layering with the sauce & cheese. Morningstar chik'n patties also work good for " chik'n " parm. (Don't need to bread those, they come with coating.) I salt the slices for 30 minutes before I start, then after washing them, I coat the slices and bake them before layering them in the baking dish. My recipe sounds a lot like what Jack likes. It uses olive oil with basil and oregano and garlic. I got creative once and got some portabella mushrooms and cut the tops into two slices crossways and layered that in with the eggplant slices with sauce between. Everyone loved it.
