Guest guest Posted January 13, 2007 Report Share Posted January 13, 2007 1/2 - 2 c. mushrooms (shiitake, cremini, or baby bella), cleaned, stemmed and sliced 4 oz. (about 2 cups) fresh snow peas, trimmed and cut in half crosswise 8 oz. firm tofu, drained and diced 2 scallions, sliced 3-4 T. miso (any variety) dissolved in 1/3 c. water Fresh ground pepper to taste 1. Combine the mushrooms and 5 cups of water in a large saucepan and simmer gently for 10 minutes. 2. Add the snow peas and tofu. Simmer just until the snow pears are tender/crisp, about 3 minutes. 3.
