Guest guest Posted January 12, 2007 Report Share Posted January 12, 2007 I made this for the first time this week, using small black beans, soy milk and all the spices except the chili powder, & loved it Milk Beans (Maharagwe na Maziwa) (from Tanzania) (Serves 4) 1 C onions, chopped 1 C fresh or canned tomatoes, chopped; or tomato sauce 1 T. oil 2 C cooked pinto, kidney or other beans with a bit of cooking liquid about 2/3 C milk for gravylike consistency 1 tsp salt pepper to taste 1 or more of the following spices: 1/2 t. ground cumin 1/2 t. ground coriander 1/2 t. ground turmeric 1 t. curry powder 1-1/2 t. chili powder In a large saucepan, saute onions and tomatoes in oil for 2-3 minutes. Add the rest of the ingredients. Bring to a boil. Reduce heat and simmer 15-20 minutes to blend flavors. Serve over rice.
