Guest guest Posted January 11, 2007 Report Share Posted January 11, 2007 Ginger-Orange Squash 2 lbs. butternut squash, peeled, seeded and cut into 1 inch pieces 2 tbsps. frozen orange juice concentrate 2 tbsps. brown sugar 1 tbsp. unsalted butter 1/4 tsp. ground ginger Preheat oven to temperature 400 degrees. Combine all ingredients in a buttered baking dish. Cover with foil and bake 45 minutes, or until squash is tender. Transfer to a bowl, season with salt and pepper to taste and mash. Serves 4.
