Since I use a lot of powdered turmeric, I'm all excited about trying it whole. (Yeah, I'm pretty dorky...) I found instructions for powdering it (clean, sun dry 2-3 weeks, grind), but I'd love it if anyone has other suggestions on using the whole root in cooking. Yes, my local Coop sells it in the vegetable section alongside other roots like several varieties of ginger root. I buy it when it is in season and freeze it. In my herbal tea, I simmer it for 20 minutes with other herbal roots, add the other herbs, allow it steep for 24 hours, strain, and store in refrigerator to be drunk daily. When I strain the tea, I remove the turmeric roots [because they still have some strength left], store them in the freezer with the rest of vegetable peelings and then use all of this to make my vegetable stock. The effect is much more subtle--it does not change the color of the stock to an appreciable amount. However, when I make Miso Soup, the tofu turns yellow. Kathleen Eureka CA I have only tried whole turmeric one time. I used it to make some sort of potion a few years ago. You can use it in recipes by slicing it. I am not an expert on whole turmeric.
