And it is sure good!! I have so much to catch up on. I have to check out the recipe files!! I have been making a quick breakfast and will do this when college starts back up next week. I take a can on hominy (either the white or the yellow), rinse it in a strainer, fry it in the frying pan with your choice of sprays, and when it is just starting to show color from frying, I add two scrambled eggs. I make an entire can of hominy which costs only 40 cents at Wal-Marts as my cats adore it and it doesn't seem to bother them.
