Guest guest Posted January 7, 2007 Report Share Posted January 7, 2007 hi everybody, Ok, here it is, my most yummy garlic soup recipe: <it sounds like a lot of milk, but believe me it is mmm mmm good> Ingredients: 1 head garlic minced ( I mince mine as fine as possible in the food processor) 1 can evaporated milk 4 cups milk ( I use 2%) better than bouillon vegetable flavor to taste ( I use 2 tbs about) 1 tsp each: dried cilantro dried basil dried oregano 2 tbs. yeast flakes (optional) cornstarch and water to thicken (optional) 1/8 cup wine or cooking wine Croutons (optional) Olive Oil, or sesame oil, or any oil-about an 1/8 of a cup sauté minced garlic in oil on very low heat for about 3 minutes or so. You do NOT want the garlic to get brown, just a slight tan color or no color change at all. add the evaporated milk, milk, spices, wine, and better than bouillon (start off slowly, and taste test for potency) let simmer on very low heat stirring often for about 10 minutes. If you choose to, add some thickener at this point, and simmer a little longer until desired consistency. when soup is to your liking as far as strength and consistency, turn off flame and add the yeast flakes, and stir well. serve with a smile and top with fresh ground black pepper and croutons if desired. I make biscuits ( store bought canister dough) with this for a quick on the go dinner before DD's basketball games. serves one .... if it's me ..... normally it will serve more, I don't know because I never got that far. hugs, Chanda Quote Link to comment Share on other sites More sharing options...
