Both work.... EVOL has less poly-unsaturated fats and mor mono-unsaturated

fats so you will have less trans-fats created by the cooking process

 

If you have a health food store near ... Spectrum makes an unrefined coconut

oil. Coconut oil has the best heating qualities .... takes higher temps

than the other oils before creating trans fatty acids from cis-fatty acids

Thanks for the education regarding coconut oil. Since I have a

propensity to burn things, I'd no doubt create those trans fats so I'll

stick with the EVOO...
