Old-Fashioned Chess Pie With Pecans

 

1/2 cup butter

1 cup granulated sugar

4 eggs - 3 whole, 1 separated

1/4 cup heavy cream

2 teaspoons vanilla extract

1 cup chopped pecans

 

Cream butter and sugar until light. Beat in 3 eggs and 1 egg yolk, one at a

time, beating well after each addition. Beat in cream and vanilla. Stir in

pecans. Beat the remaining egg white until stiff peaks form then fold into

filling mixture. Pour mixture into shell; bake at 350 degrees for 45 minutes, or

until set.
