I would prefer to use fresh beans, but what they were offering just didn't look good so I resorted to frozen. Green Beans & Potatoes Medium onion chopped 2-3 cloves garlic chopped or put through a press 16 oz. bag frozen whole green beans About 5-6 potatoes peeled and quartered (bite sized pieces or a little larger) Jar of DelMonte petite diced tomatoes (undrained) 8 oz. can of tomato sauce About half a cup of water Few dashes Italian seasoning EVOO Salt & Pepper to taste Saute onion and garlic in a little olive oil. Add tomatoes and tomato sauce, potatoes, beans and seasoning. bring to a boil and then cook, partially covered, for about 30-45 mins until veggies are tender and sauce has thickened a bit.
