BRANDIED FRUIT

 

1 cup fruit cocktail, not drained

6 cups sugar

3/4 cup (6 ounces) brandy, bourbon or whiskey

1 cup fruit cocktail, drained

1 1/2 cups pineapple chunks, drained

1 cup maraschino cherries, drained

1 cup apricot halves, drained

1/2 cup canned white grapes (must be canned -- do not use fresh grapes)

 

Into a gallon jar or stoneware crock, place 1 cup fruit cocktail, undrained,

1 cup sugar and 2 tablespoons brandy. Cover jar. Let stand in refrigerator 2

weeks, stirring 3 times.

Add 1 cup drained fruit cocktail, 1 cup sugar and 2 table-

spoons brandy. Cover, let stand for 2 weeks, and stir 3 times.

Add 1 cup pineapple chunks, 1 cup sugar and 2 tablespoons brandy. Cover, let

stand for 2 weeks, and stir 3 times.

Add maraschino cherries, 1 cup sugar and 2 tablespoons brandy. Cover, let

stand for 2 weeks, and stir 3 times.

Add apricots, 1 cup sugar, and 2 tablespoons brandy. Cover, let stand for 2

weeks, and stir 3 times.

Add 1/2 cup each of pineapple chunks and grapes, 1 cup sugar and 2

tablespoons brandy. Cover, let stand for 2 weeks, and stir 3 times.

At the end of last 2 weeks, cover tightly and refrigerate. Fruit will keep

indefinitely. Spoon from bottom of jar to serve over cakes, puddings and ice

cream.

Makes 2 quarts.

 

Note: Dates can be used instead of canned grapes.
