I forgot to add, that you can make a Meatos loaf. It is wonderful sliced up on

some hearty bread with some mayo/Veganaise.

Here is a repost of the Meatos from the files. It is so easy and yummy. This

recipe has been in our family for several generations and is a favorite.

 

Meatos

 

This was a favorite recipe that my grandmother would make when she came to

visit us, which was often. Smile. Love to eat it right out of the oven hot,

but it is also good on a sandwich, sliced and put on hearty homemade Whole

Wheat Bread with Mayo/Veganaise the next day. It is good on crackers also.

Meato's

1 cup Peanut Butter

2 16 oz. cans Petite Diced tomatoes with Green Chilies or Jalopeno's

1 tsp. Sage

1 c. Onion, diced

1 tsp. Salt

3/4 c. flour(more or less)

 

Mix all the ingredients, adding the flour until it is thick like cake batter

mixture. Put into a sprayed casserole dish. Bake @ 350 for about 1 hr.

Check middle for being done. Turn off the oven and leave in a closed oven while

until the oven cools off. This will finish it off better.

Leftovers from the your evening meal are great to take along.

 

Take a Russet or sweet potato and microwave it. You could take small

containers of Butter, Sour Cream, grated cheese, etc to add to it. Take a can of

Campbell's Vegetarian Vegetable Soup or tomato soup, just add water heat up in a

mug at work. Take along some Parmesan cheese in a baggie, Cheese -it crackers in

Hot and Spicy flavor, a pinch of oregano to add to it. Yummmm.

 

Make a sandwich spread out of mashed Worthington Vega-links and Mayo/Veganise,

add some finely diced onions and celery if desired and take a sandwich to work.

You can make a " Chicken " Spread using a food processor. Put in some drained

pieces of Worthington Fri-Chick, a little bit of Cream Cheese, Mayo/Veganaise

and process until fairly smooth. Stir in some diced celery, onions and pickle

relish if desired. You can either take it and eat it with some saltines or

spread on some good hearty bread.

 

Take fresh orange slices, a can of mandarin oranges or pineapple and some

cottage cheese. I love a bowl of freshly assembled salad bowl of pineapple

tidbits, mandarin oranges sections, cottage cheese, sunflower seeds, almonds,

pecans and raisins. Take all the ingredients in separate containers and mix

together at lunch.

 

Morning Star Farms has " chicken patties " , spicy black bean burgers, grillers,

and lots more patties that you can either toast up in the oven or microwave

them. They make excellent sandwiches on ww burger buns. I put my wet

ingredients(lettuce, tomato slices, pickle slices, onions, green pepper rings)

for the sandwich in a zip lock bag and add just before I eat the sandwich.

 

You can pick up great Vegetarian luncheon " meat " slices at any Adventist

Health food store. They are excellent for making hoagies/subsandwiches with.

Fresh tossed salads, spinach salads or fruit salads are great. You can take

along salad dressing, croutons, Baco Bits, saltines and grated cheese in

separate containers to add just before you eat, so they don't get soggy. Snack

size ziplock bags are great for this.

 

Raw Veggie slices are great and some fresh fruit help round out your meals. V8

juice is nice to take for a healthy drink.

 

Hope these give you some ideas that make your lunch even better.

I'm having some trouble for new lunch options. There are not very many options

for me at

my school and so I tend to bring my lunch from home. I would love to hear some
