TOFU-FRUIT PUDDING

 

 

Categories: vegetarian, low fat, desserts

 

Yield: 4 Servings

 

1/2 lb Firm tofu

3 tb Honey

1 c Frozen fruit; such as raspberies, strawberries or blueberries

 

Combine all ingredients in a food processor

with a metal blade.

 

Process until smooth and creamy.

 

Chill for at least an hour.

 

Serves 4.

 

Per serving: 149 cal;

4g prot; 2g fat; 30g carb; 0 chol; 5mg sod
