Guest guest Posted December 31, 2006 Report Share Posted December 31, 2006 For my son's wedding reception, my new daughter-in-law asked that I make some vegetarian selections. Dutifully (and enthusiastically!) I printed out many recipes and finally narrowed it down to 4. One, I just invented using the ingredients I had available. This was an unexpected hit, with many requests for the recipe. As near as I can remember, this is it: 1 jar (maybe 10 ounces?) sun-dried tomatoes packed in oil and herbs, drained and lightly rinsed 1/2 teaspoon dried basil 1 package silken tofu flour tortillas parmesan cheese 1 package frozen spinach, thawed, drained, and squeezed dry with paper towels Give the tomatoes a short whirl in the food processor. Add tofu and basil. Process until smooth. Spread a spoonful of the mixture thinly on a tortilla. Sprinkle on some parmesan and a little spinach. (Try to keep the spinach from clumping.) Roll up tightly. Refrigerate overnight. Slice into 1/2 inch sections. Serve. This was extremely attractive on the plate with the red and white pinwheel effect.
