Perrone Serving Size : 12 Preparation Time :0:00 Categories : Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds yellow beans (or navy beans) -- soaked overnight 2/3 cup molasses 1 1/2 cups brown sugar 2 teaspoons salt 2 cups maple syrup 4 tablespoons oil or butter substitute 6 tablespoons ketchup 2 medium onions -- chopped 2 medium lemons (juice of) Cook beans until soft, but not mushy (1 hour to an 1 1/2 hours). Pour off water and rinse well; at least 4 times to remove as much gas as possible. Drain well and pour into a large roasting pan. Add all ingredients and then cover well with hot water. Bake slowly for 8 hours or so. We make them the night before we plan on serving them so that they can bake all night long in the oven at 175°. Please note that if you make these in a slow cooker to use a lot less water. Baking in a regular oven produces a wonderful thick sauce. Slow cookers result in watery sauces.
