Onion Shortcake

Amount Measure Ingredient -- Preparation Method

1 large onion -- thinly sliced

1 package corn muffin mix -- 12 ounces

1/3 cup milk

1 cup sour cream

1/4 teaspoon dill seed

1/2 stick butter or margarine

1 egg -- beaten

1 can cream style corn

1/4 teaspoon salt

1 cup cheddar cheese -- shredded

 

Preheat oven to 425°.

 

Saute onion in butter or margarine. Set aside.

 

Combine muffin mix, egg, milk and canned corn. Pour into greased 9x13

oblong baking pan.

 

Add sour cream, salt, dill seed and 1/2 cup of cheese to onions.

Spread over batter in baking pan.

 

Sprinkle with remaining cheese.

 

Bake for 25 to 30 minutes uncovered.

 

Serve in squares with additional onions that have been sauteed.
