Guest guest Posted December 28, 2006 Report Share Posted December 28, 2006 Baked Veggie Appetizers 1/3 cup melted butter 1 egg 2 tsps water 1/2 cup all purpose flour 1/2 tsp salt 2 cups fresh veggies (broccoli flowerets or cauliflowerets, 1/4 " carrot slices, 1/2 " zucchini slices, 1/2 " strips green or red pepper) - note: can use thawed frozen broccoli Heat oven to 450??F. Brush bottom of pan with about 1 tbs of butter Beat egg and water with a fork in a shallow dish. Mix flour and salt in another shallow dish Dip about 1/4 of the veggies in egg mixture. Remove 1 veggie piece at a time with a slotted spoon, fork or hands; roll in flour mixture to coat. Place in a pan. Repeat with remaining veggies. Pour remaining butter carefully over each piece and into pan. Bake uncovered, turning once, until veggies are crisp-tender and coating is golden brown, 10 to 12 minutes; drain.
